Old Greeks ate flat surfaced bread called plankuntos. This bread could be the inheritance of something what Babylonians had eaten during the previous centuries. Old Egyptians used to make flat bread seasoned with herbs in honour of the Pharaoh’s birthday. The word pizza could be derived from the Latin word picea, the word used by the Romans to describe the “browning” of bread in the oven. In the 16th century, after return from Mexico and Peru, the Spaniards presented the Europeans the tomatoes which originally had been thought to be very poisonous. Today, tomato is an important ingredient of the Mediterranean cuisine and it is used in many pizza recipes. The original mozzarella cheese had been made from the milk of the Indian bison already in the 7th century. It had been brought to Italy by the Asian people. During the 17th and 18th centuries, Naples won the reputation of a city where the best pizzas have been made. During the 19th century, pizza became very popular food in Italy, especially among poor part of the population. The »Antica Pizzeria Port Alba« is considered to be the first true pizzeria which was opened in 1830 in Naples and it is still in business. In 1889, Rafaele Esposito prepared the pizza on the occasion of king Umberto the First and Queen Margherita visit. In order to make the pizza which will remind to the Italian flag with its colours, Rafaele used the red tomato sauce, white mozzarella cheese and green herbs, thus creating the first Margherita pizza which has become the world standard.
